INGREDIENTS

  • 4 C mushroom, finely chopped
  • 1 tsp SuperFeast Mason Mushrooms
  • 1 lge carrot, grated 
  • 1 sml red onion, diced 
  • 4 lge garlic cloves, crushed 
  • A pinch of red pepper flakes 
  • A pinch of cinnamon (trust me!!) 
  • S & P to taste 

METHOD

  1. Sautéed in ghee (or cooking fat of choice) until the onions are tender and mushrooms have caramelized slightly.
  2. Next, we stir in sauce which we make simply with - 
  • 1 can diced tomatoes + 2 Tbsp of tomato paste 
  • 3 Tbsp cashew butter - this makes the sauce extra lush 
  • 1 tsp of balsamic vinegar 
  • A few fresh basil leaves roughly chopped + 
  • 1 (heaping) tsp Meadow & Marrow Bone Broths "boost" beef bone broth is boosted with MCT oil & beets & it's ah-maze-zing!) + 1/2 C water - sub 1/2 C your fave broth
  • 2 scps Vital Proteins collagen - optional for extra protein & gut health

      3. Let it all simmer until nicely reduced and served on a mountain of zucchini            noodles (or regular spaghetti, a baked potato or even just some wilted       greens

To serve top with :
  • Chili 
  • Extraordinary Foods cashew "cheese" 
  • The Haus Of Health hemp seeds (for extra protein) 
  • A drizzle of Primal Kitchen ranch (or make your own - mix 1/4 cup coconut yogurt with 1/2 tsp each of garlic, onion pwd + S&P & a squeeze of lemon juice)
